Omega Yeast OYL-033 Jovaru™ Lithuanian Farmhouse – Special Order Limited Release
Omega propagated this batch fresh specifically for Northern Brewer. OYL-033 Jovaru™ Lithuanian Farmhouse is no longer part of Omega Yeast's regularly packaged homebrew lineup. We special-ordered a new propagation, and Omega grew and packaged this batch for us, putting a fresh, homebrew-ready pitch of this distinctive Lithuanian farmhouse strain back in brewers' hands for a limited run.
Jovaru is a highly attenuative farmhouse yeast with citrusy esters, restrained spicy phenolics, and a surprisingly soft mouthfeel for such a dry-finishing strain. Expect notes of lemon pith and black pepper with a rustic fermentation character that works beautifully in farmhouse ales, saisons, Belgian-style wheat beers, and other recipes where you want the yeast to be part of the beer's personality.
This isn't simply a modern interpretation of Lithuanian farmhouse yeast. OYL-033 originated with brewer Aldona Udriene and the historic family culture used to produce Jovaru beer in Lithuania. Omega brought the strain to U.S. brewers through its partnership with Udriene, preserving a genuine piece of Lithuanian farmhouse brewing tradition in a culture homebrewers can actually ferment with.
Brewing with Jovaru Lithuanian Farmhouse
Jovaru's combination of citrus, pepper, high attenuation, and soft mouthfeel makes it an especially interesting alternative in farmhouse and wheat-based recipes. We recommend trying this fresh propagation in these Northern Brewer beer recipe kits:
- Beekeeper's Saison Extract Beer Recipe Kit – honey and farmhouse character give Jovaru plenty of room to show off its citrus and pepper notes.
- Lemondrop Saison Extract Beer Recipe Kit – Jovaru's lemon-pith character is a natural match for the bright citrus character of Lemondrop hops.
- Gaarden Hoe Witbier – wheat, citrus, and spice make a natural home for Jovaru's soft mouthfeel and restrained phenolics.
Jovaru is particularly fun when you're looking beyond the standard saison fermentation profile. It can finish very dry while still presenting a rounded mouthfeel, and its wide-ranging farmhouse character can completely change how a familiar recipe drinks.
